The goose liver has been salted with sake (a kind of wine), to remove the unpleasant smell and give it a new delicacy. Usually the goose liver is fried when cooking, while the salted goose liver tastes better, and not oily at all. With fresh fruits, the dish is easy to do at home and most suitable to make in this dry season.
