Cang Yue offers modern twist

The newly opened Cang Yue, which specializes in authentic Northern Chinese cuisine, Cantonese dim sum and Shanghai specialties, is combining the essence of all three cuisines with modern cooking methods. Stewed fish head in an iron pot uses fresh fish from the Miyun reservoir in the suburbs of Beijing. And chrysanthemum-shaped tofu in soup with matsutake is another highlight. Huadiao liquor saturated chicken is another must try. It represents the flavor of Jiangnan.
