After 10 semi-finalists competed earlier this month, Chang Liu at Beijing's Huai Yang Fu restaurant has been announced as the winner of China's S. Pellegrino Young Chef local challenge, and will advance to the world grande finale competition in October in Milan, Italy. The contenders were selected by ALMA, the international educational and training center for Italian cuisine, and judges included renowned chefs working in China such as Steven Liu, Ku Chi Fai, Jacqueline Qiu, Riccardo La Perna and Alan Yu. Chang Liu's signature dish, "Union", combined ingredients such as Chinese mitten crab, winter bamboo shoots, century egg and sweet-scented osmanthus.
