Max Levy's seasonal set menu at Okra - a five-course steal at 318 yuan ($47.60) - once again shows the benefit of his long training with Tokyo's master sushi chefs. The salmon in rice paper is pretty as a painting, dressed in organic romaine lettuce from local Little Willow Farm. More nakedly presented offerings, like the seductively gleaming chef's selection of 6 nigiri sushi and the North Korean live uni (a 110 yuan add-on), are more elemental. Rounding out the set menu: Smoked Chilean wagyu brisket soup with crystal turnip and matsutake mushrooms, and sliced spring chicken leg with kimchi scrambled egg and sweet ginger. Sake pairing available for an additional 190 yuan per person.
