Recipe | Toon salad with blanched walnuts

Sprigs of spring

Ingredients:

100 g toon shoots

100 g walnuts

1 tbsp lemon juice

Pinch of salt

2 tbsp olive oil

Method:

1. Trim and rinse toon shoots. Shake dry in a salad spinner or gently dry with paper towels.

2. Blanch walnuts in boiling water and gently scrub off the skin.

3. Place toon sprouts and walnuts on a plate.

4. Place the lemon juice, olive oil and salt in a small jam jar and cover tightly. Shake vigorously.

5. Pour dressing over toon shoots and walnuts.
