Dishes a treat for the senses

Mountainous area a natural bounty of fresh ingredients and sophisticated flavors

Generations of Tujia, Miao, Dong and Han communities have thrived in the Greater Zhangjiajie International Tourism Area, where the mountains provide ingredients, traditions shape techniques, and blended cultures create a unique, seasonally inspired cuisine rooted in the land.

The hallmark of this mountain cuisine is its emphasis on "freshness, cured flavor and tanginess", reflected in signature dishes that embody the area's natural bounty. Huotang smoked bacon, a staple of mountain kitchens, preserves generations of culinary memory. Bacon is slow-smoked over pine and cypress wood fires, transforming its pale surface into a deep brown hue with a shiny, flavorful crust.

Miao sour fish, an intangible cultural heritage item of the Xiangxi Tujia and Miao autonomous prefecture, is made with rice paddy carp coated in glutinous rice and millet powder before undergoing natural lactic acid fermentation for at least 30 days. Pan-fried to golden crispness, its crackly exterior contrasts with the tender meat inside.

Another gem is duck with blood rice cake, which combines duck blood and glutinous rice into dense cakes that soak up a flavorful broth. The craft of creating this dish is recognized as part of Huaihua city's ICH.

Yuanling sun-dried cured pork has deep emotional ties to the region's history, originating from the wives of boatmen who prepared it for their husbands ahead of long journeys. Made from the hind legs of local black pigs, marinated and expertly air-dried, the meat is celebrated as one of Xiangxi's best delicacies.

Another treasure is Wugang-style braised bronze goose, made from the region's native birds stewed with more than 30 medicinal herbs. Known for its thin skin and tender meat, it represents one of Hunan's "Three Treasures" alongside Ningxiang pork and Dongting lotus seeds.

The ingenuity of Zhangjiajie's cooks is also evident in dishes such as jar-preserved vegetables. Long beans are salted, air-dried and massaged until pliable, then stored in clay jars where natural fermentation infuses a rich, tangy flavor.

Visitors to the region can relish a wealth of distinctive products. Zhangjiajie berry tea, a time-honored treasure for the Tujia people, is cultivated across 10,000 hectares of land in Yongding district, earning the district the title "Home of Berry Tea in China", with an annual output value exceeding 2.8 billion yuan ($418 million).

From the artful preparation of culinary heritage to innovative packaging of local specialties, the many flavors of Greater Zhangjiajie are now linking night markets, handicraft workshops and rural tourism, turning regional resources into tangible prosperity.
