4. Bamboo shoots are not only a spring delicacy in China, but also widely eaten in Japan, Korea and Southeast Asian countries. The fresh bamboo is so important in Japanese kitchens that they make use of every part of the plant. For example, the leaves and bark are sometimes used as wrappers.
