In Xinjiang, chili peppers bring vivid color at harvest time

On Aug 3, at the open-air drying site in the county's Tawenjueken township, rows of bright red chili peppers were hung on racks. Farmers hurried to sort and spread the peppers, ensuring they would meet the moisture content required for sale.

Bohu Chili was designated as a nationally protected geographical indication product in 2025. The area's abundant sunlight, fertile soil and sharp day and night temperature swings contribute to their thick texture and vibrant color, intensifying their flavor when dried — a quality sought after in the market, said Ren Xiaojin, chairman of the Fumin vegetable cooperative in Benbutu town.
