Documentary traces the cultural impact of oyster sauce

A documentary exploring the history and cultural significance of oyster sauce premiered in Qingdao, Shandong province, last week, tracing how a traditional coastal ingredient has evolved into a key element of Chinese cuisine.

Produced by Tencent Video and co-produced by DOClabs Beijing, Oyster Sauce: A Drop of Umami is China's first documentary focusing on oyster sauce culture. Centered on the pursuit of "umami", the documentary follows the journey of oyster sauce from the country's centuries-old oyster farming traditions and traditional production methods to its role in regional cuisines and the global spread of Chinese food.

The documentary premieres on Tencent Video on Aug 12, with new episodes released every Monday from Aug 17.

At the post-screening discussion, chief producer Chen Xiaoqing, said the documentary goes beyond food itself to explore why people connect with certain flavors and the stories, craftsmanship and time behind them.

"Oyster sauce reflects a unique aspect of Chinese culinary wisdom — extracting the essence of an ingredient's flavor and transforming it into something that can enrich other dishes," Chen said.

Producer Zhu Lexian, said the team began the project with a question: "Where does umami come from?" The documentary explores this through stories of fishermen, traditional makers, food researchers and modern factories, presenting a journey of flavor that connects different regions and generations.

To present the abstract concept of umami, the production team used visual and sound techniques to capture ingredient textures, cooking processes and culinary memories, allowing audiences to better experience the flavor through storytelling.

At the event, the China Oyster Industry Freshness Ecosystem Alliance released the industry's first oyster sauce quality framework, the "Six Freshness" initiative, covering source selection, production techniques, quality control, scientific development and packaging.

Industry experts said the framework aims to move oyster sauce production from concept-based promotion toward quality-driven competition, creating clearer standards for consumers and encouraging higher-quality development across the industry.

"We hope to use oyster sauce as a starting point to help every Chinese family discover their own new way of living with freshness — making freshness not just a step in cooking, but a choice in everyday life," said Gui Junqiang, vice-president of Foshan Haitian Flavouring and Food Company.
