Hong Kong chef Grace: Braised pork trotters with preserved plums

1.Pork Trotters : 2 whole pieces (chopped)

2.Preseved plums: 4 pieces

3. Star Anise: 3 pieces

4.Dried tangerine peel: 1/4 pieces

(soak into water)

5.Mature vinegar: 200 ml

6.Light soy sauce: 1 Tbsp

7.Dark soy sauce: 2 tsp

8.Oyster sauce: 2 Tbsp

9.Garlic : 3 pieces (beat it )

10.Ginger: 3 pieces

11.Salt: 1 tsp

12.Shaoxing wine: 1 Tbsp

13.Cooking oil: 2 Tbsp

14.Drinking water: 600 ml

Preparations and Steps:

1.Rinse pork trotters, high heat to blanch for 10 mins, pick it up, running water to rinse it and drain;

2.Add 2 Tbsp oil into the Wok/Pot, add ginger, garlic, star anise, preserved plums, turn to high heat, add pork trotters, Shaoxing wine, light soy sauce, dark soy sauce, oyster sauce, mature vinegar, fast stir fry for 2 mins;

3. Pour 300 ml drinking water, fast stir fry it, open lid (high heat) cook for 5 mins;

4. Then pour rest of the drinking water (water level should covered pork trotters), stir it, close lid (high heat) to cook for 45 mins, turn off the heat, simmer for 15 mins;

5. After 15 mins, open lid and add salt, stir it, close lid, high heat again, turn medium heat when boiling, cook for another 20 mins, turn off the heat;

6. Add ginger slices on top and serve! Enjoy!
