Oval-shaped flat bread

It may not sound very lovely, but the long oval-shaped flat bread is quite popular, at least in the town of Zhouzhuang,in Jiangsu province.

The flat bread is thin and sweet to the taste, with a bit of salt, and producing it requires a careful selection of materials and a good deal of workmanship. The baker kneads the dough, adding cooking oil five to six times until it is thoroughly mixed. The salt is simmered first and the shallot is pounded into a soft mass. Next, the truth of whether the flat bread tastes good or not is decided by the skill of the baker, who has to turn the bread over every now and then until it is just the right bright yellow and gives off a sweet fragrance. Many tourists like to eat these tasty snacks while having a bit of tea.
