Socially responsible tea

A new afternoon tea menu at Palm Court in The Langham, Hong Kong, launches Feb 1 with an eye to support social responsibility and sustainability. Executive chef Pedro Samper has sourced different social enterprises that specialize in producing organic ingredients and Fair Trade products from countries like Guatemala, Ghana, India and Vietnam. Look for sweet treats like three-chocolate delight, a decadent layered mousse with different hues of Ghanian chocolate. Kumquat, banana and dragon fruit religieuse choux, meanwhile, stacks two crispy choux pastries with fruit cream filling. The green experience includes a selection of organic beverages, including English Breakfast Tea, Earl Grey and Cocoa certified by Fair Trade and 100 percent Arabica-bean brewed coffee. Price: HK$348 ($45) per person or HK$598 for two, plus 10 percent service charge.
