First bite becomes favorite bite

Joshua Best, a student from London currently studying at Beijing Foreign Studies University, recently discovered his favorite dish in Beijing — and it wasn't the city's world-famous duck.

It was something he tried for the first time: braised and stewed pork trotter tips, a signature dish of Hui Feng Tang, a time-honored restaurant in Beijing with a history of over 100 years.

After trying a series of dishes at the restaurant, he found that the braised and stewed pork trotter tips had a more versatile taste.

He encouraged students studying in China to stay open to new things, so that they can touch the very soul of the culture of China, rather than just scratching the surface.
