Frozen tofu, a specialty of Wudang Mountains, is created by two unique natural conditions, the air temperature of minus 20 degrees Celsius and the clean spring water.

According to legend, frozen tofu was first made by Zhang Sanfeng, a Taoist priest who lived in the Ming Dynasty (1386-1644), as a dish for visitors at Wudang Mountains. Hundreds of years later, people here still eat frozen tofu during the Spring Festival and other celebrations.

It is made with local soybeans and spring water in the outdoor low temperature, making it a green food.

The dish is made in winter but can be preserved for a long time after it is air dried. Many people say that it tastes much better than meat, and it is used as an ingredient in local cuisine.
