Ginger milk curd

Ginger milk curd is a Cantonese pudding made with ginger juice and buffalo milk, plus sugar to taste. Without steaming, baking, gelatine or agar-agar, the milk is able to solidify into a custard just by mixing with some ginger juice.

Ingredients

Milk 250ml

Ginger juice 2 tablespoon

Process:

1. Peel and chop the ginger

2. Transfer to a strainer. Squeeze out all of the ginger juice into a bowl.

3. Put the milk in the microwave and heat until it reaches 85 degrees C (185 F).

Quickly pour the hot milk into the ginger juice. Cover and let rest for 5 min. Do not mix or stir it.

4. Ready to serve
