"This is absolutely delicious. Where is it from?" the diner asks in a reverential tone.
"It's Koshihikari, from Uonuma," the cook replies, barely able to conceal his pleasure.
This exchange, often heard in restaurants around Japan, is not over some haute cuisine, but over a simple bowl of white rice.
