Something for summer

Traditional Chinese cuisine has many specialties that are good for summer. Peking roast duck giant Quanjude's Shuangyushu branch offers some of these dishes. Duck soup with mushroom and snail slices (老店一品鼎顶香) is supposed to replenish energy, and increase appetite. The "longevity soup" (养生长寿汤) is made of bamboo fungus, lily bulb, black fungus and yam, all light tasting but healthy ingredients.

Sea cucumber is thought to replenish yin energy. The restaurant prepares the ingredients in several ways. Sea cucumber with five grains (五谷浸素参) has a golden color and is low in oil, sugar and salt. Mineral water boiled imitation sea cucumber (天水辽参) has water from a Tibetan glacier, besides ginseng, and flower of Chinese caterpillar fungus, served in a tea pot. Imitation sea cucumber in rice soup (素参捞饭) uses the same sea cucumber made of algae and soybean protein.

The restaurant also offers slightly bitter tasting sauteed Chinese cabbage (清炒穿心莲), as well as a variety of mushroom dishes to cater to the hot season.
