Spring greens

Da Dong Peking Roast Duck Restaurant (大董烤鸭店) has just introduced new dishes for the spring season, combining the healthy green offerings of spring with beautiful presentation. Among the new dishes are spring onion in sautéed Geoduck clam with Chinese spring chives (春韭炝拔蚌), Chinese fragrant toon turbot fish roll (香椿汁多宝鱼卷), and tender green pea and ham in olive oil (橄榄油上蒋小嫩豆).
Some classic dishes of Da Dong have been revamped with a touch of spring green. These include the signature Da Dong braised sea cucumber (大董烧海参), known for its great taste and chewy texture, and braised prawn from the Bohai Sea (油焖渤海春虾), which is presented as a beautiful painting.
Last year Da Dong introduced molecular gastronomy. That is applied to two dishes for the season - asparagus soup with bean curd and Chinese fragrant toon leaves (香椿豆腐配液氮芦笋汤), and an imitation melons dish (瓜), an enjoyable dessert.
