Egg-cellent matches
Chef Nicolas Le Bec of 2-star Michelin restaurant Le Bec, Lyon has organized two wine-pairing meals at the Raffles Beijing Hotel this weekend. He spoke exclusively to BJW about his career.
36-year-old Le Bec started cooking when he was 16 and quickly rose to be one of the stars of the gastronomic circle, moving from Jacques and Laurent Pourcel to Alain Passard and Jean Pierre Vigato. In December 2003, when he was still only 30, he opened Restaurant Les Loges, for which he was awarded his first Michelin star. Within a year he had opened Restaurant Le Bec and received another star.
"It was first and foremost the passion of implementing my own culinary vision that I believe was awarded with a first star and thereafter the unwavering focus on consistency in terms of quality," said Le Bec, "so I believe the second star came more or less as a natural progression."
