Tasting a nation's delicious heritage

An ongoing expo at the China National Agricultural Exhibition Center brings together 14 traditional Chinese cooking skills to showcase the nation's intangible cultural heritage.

These include Quan Ju De's open-oven Peking roast duck, Bian Yi Fang's closed-oven Peking roast duck, Dong Lai Shun mutton hot-pot, Hong Bin Lou's complete mutton banquet, Du Yi Chu Shao Mai, Fuzhou Ju Chun Yuan Restaurant's 'Buddha jumps over the wall' soup, and Shanxin Qun Jin Hui Guan Restaurant's super-slim hand-stretched noodles and knife-chopped noodles.

Many of these classic techniques have been passed down many generations over hundreds of years. Luckily, even today, many of these foods can be found in Beijing. The expo will run till Feb 23.
