Offal opposite of awful

I'm a great believer that if an animal is to be killed for food then you should jolly well eat all of it - that said, back home it is often difficult to find innovative ways to cook offal in a way that doesn't scare those I'm cooking for.

Offal literally comes from the term "Off-fall" meaning the edible parts, (other than the muscle itself), which come off a carcass when an animal is butchered; heart, liver, lungs ("the pluck"), feet, head, tongue, kidneys, stomach etc.

You've only to observe the vigor with which the Chinese tuck into a plate of chicken's feet to realize that, thankfully, there is a far less squeamish approach to offal over here.
