Beijing has plenty of Cantonese restaurants, where people can try different schools of the cuisine known for its light but tasty dishes. Within the Cantonese cuisine there are Guangdong, Chaozhou and Dongjiang cuisines.
Guangdong cuisine has as many as 21 ways of cooking, and focuses on the freshness of materials. Roast pickling, open-oven roast duck and white-chopped chicken are a few of the signature dishes.
