With summer fast approaching, many of us are keen to lose a few of those "comfort" pounds we gained over the long, cold winter. We all want to look our best and chef So Moon Kam at Dragon Palace Restaurant (龙苑中餐厅) has prepared special dishes to meet a weight-watcher's need. "Qrganic greens" are the stars of his menu in the month of April.

"All the vegetables we use are organic produce from Beijing's Xiaotangshan," said the executive Chinese chef from Hong Kong. "Even the soup, and oil are made of vegetable materials."

Many dishes on the special menu features spring vegetables, such as bean sprouts, watercress, and bamboo shoots. Complying with the style of Cantonese cuisine, these foods are relatively light, but tasty, with an emphasis on original taste.
