Ma La Xiang Guo (麻辣香锅) -literally, "Spicy and Tongue-Numbing Fragrant Pot" -has become the hottest type of eatery among Beijingers over the past year. The basic concept is a one-dish restaurant, where you mix and match ingredients, which cooks dry-fry and serve in a large pot.
