Sichuan cuisine is one of the best in China, and one that appears most often in Chinese restaurants. Such dishes as spicy fried diced chicken with peanut (gongbao jiding) and fried sweet and spicy fish-scented pork slices (yuxiang rousi) are very well known among expats.
Many people who visit Sichuan find, to their surprise, that the cuisine is not as spicy as they expected. Indeed, although Sichuan foods are believed to be spicy and tongue numbing, that is not exactly true. The cuisine actually covers different cooking methods and caters to a range of tastes.
