Xiangchun (toon shoots)
Toon is considered to be the only tree vegetable in China. All across the country, red toon shoots herald the arrival of spring and mark the beginning of the growing season, resulting in the name “xiangchun”, literally meaning the "fragrance of spring".
Jiading locals begin consuming the toon in the early days of spring, often in the form of an omelet or simply tossed in a salad with tender tofu. For many, it signals the end of a long, cold winter.
