Three-flavored meatballs in Chicken Soup

These are commonly known as Tangmianjin and are wrapped by water gluten and stuffed with a mixture of minced chicken breast, fresh shrimp meat, pork leg, green onion, ginger, rice wine and other flavorings. The meatballs are boiled in chicken soup and have a thin pastry, tender fillings and a fine color. Professor Chen Congzhou, a famous architect, stated that the delicacy features the tastes of steamed buns stuffed with pork, wonton and steamed meat dumplings, so it is often called "three-flavored meatballs".

Braised eels with soy sauce: slaughter the live eels, and cut them into sections, add flavorings and braise them in soy sauce. The well-cooked eels should have a good color, aroma, taste and shape.
