Prawn Delight

The Jia Chinese restaurant at NUO hotel has launched an exquisite menu comprising modern Cantonese cuisine, among which is the impressive crystal prawn dish where the flesh of the crustacean is expertly sculpted into the shape of a lotus by chef Mui Wing Fai. The dish also tastes as good as it looks, with the luscious prawn flesh boasting a bouncy texture. Working together with chef Mui is chef Ho Hau Yuen who has 20 years of experience cooking Cantonese cuisine. Ho combines a range of techniques like steaming and sauteing with fresh ingredients to bring out the natural flavor of his dishes, a cooking style dubbed "New Cantonese" cooking. Such is the renown of these two chefs that they were invited to introduce Cantonese cuisine to the world by cooking at the Pyeongchang 2018 Winter Olympics.
