Mohei Sausage

Mohei Sausage

Different from the other Chinese sausages which are generally dried, hard and made from fatty pork, Mohei sausages can be made from tofu or meat.

The mixed sausage fillings are stuffed into small diameter hog casings and make 5cm long links. Both ends of the sausage are tied with a light butcher twine. Unlike the other Chinese sausages, the Mohei sausage is unsmoked. Instead, local people hang the sausages at the outside for blow drying.
