County in Shandong nurtures goose liver as culinary gem

In recent years, Linqu county, Shandong province has transformed goose liver into a sought-after local delicacy, which was achieved through a collaborative effort between local enterprises and the government.

A local goose liver production company has successfully created three distinct food products tailored for different culinary uses, catering to Chinese hot pot, Western pan-frying, and Japanese sushi. This diversification of products has not only enriched the market but also expanded the industrial chain in Linqu. The county now boasts a comprehensive industrial chain encompassing breeding, farming, processing, sales, and research and development.

The company's leader highlighted the importance of offering premium products for both high-end markets and the general public. Through partnerships with Jiangnan University, an internationally renowned institution for food science, the company has developed affordable items like goose liver paste and sliced goose liver, priced at around 40 yuan ($5.51) per 100 grams, making this luxury ingredient accessible to ordinary consumers.

Both local goose breeding enterprises and the Linqu county government are actively engaging in further development initiatives. The county aims to transform into the country's leading production and processing hub for goose-related products, transitioning from goose liver to a complete goose industry. Its vision is to establish Linqu's goose liver as a quintessential local delicacy, transcending its foreign origins to become synonymous with the region.
