Centuries-old craftsmanship of Daliu noodles

Daliu noodles, named after Daliu town – located in Ningjin county, Dezhou, Shandong province – is one of the three famous delicacies of Ningjin.
Originating during the Emperor Qianlong period (1736-1796) of the Qing Dynasty (1644-1911), Daliu noodles have a history spanning over 200 years and have been recognized as a famous snack in Shandong and a provincial intangible cultural heritage. These noodles are distinguished by their fine, vermicelli-like strands, tender green color, refreshing taste, and soft yet resilient texture. When served in a bowl, they form shapes reminiscent of bowstrings, earning them nicknames like "golden threads in a bowl" and "bowstring noodles".
