The sheet jelly production base in Houmiao village, Nanwangdian town, Dingtao district of Heze city in Shandong province,  has recently been a hive of activity.

Sheet jelly is a kind of transparent and chewy noodles made from mung bean starch. It is made by pouring a mung bean starch mixture into boiling water before slowly stirring the mixture. After scooping up the luminous and translucent noodle skins, villagers leave them out to dry.

The resulting handmade noodle skin is luminous, translucent, and tough yet chewy.

Houmiao village has a long history of sheet jelly processing. Almost every household is engaged in the processing of mung bean sheet jelly. (Edited by Huang Junyao)
