Fermented rice noodles from Guangxi embody tradition, technique, and sensory nostalgia through meticulous handmade production
The scent hits you first. Not the sharp, spicy kick of chili oil, nor the mellow fragrance of pork broth. It is a whisper of something deeper, something of home, especially for those from the Guangxi Zhuang autonomous region.
Shengzha mifen, or freshly pressed rice noodles, is a traditional specialty originating from the cities of Nanning and Hechi in Guangxi. In 2016, its production techniques were added to the Guangxi regional intangible cultural heritage list, honoring both its history and the craftsmanship passed down through generations.
What sets these noodles apart is the natural fermentation process. The noodles are made from rice that is soaked and left to ferment at controlled temperatures before being ground into a slurry, pressed dry, kneaded into dough, and finally extruded straight into boiling water.
The process gives the noodles a gentle sour aroma, which is both appetizing and refreshing. The production is artisanal and involves a sequence of steps: soaking, fermenting, grinding, pressing, steaming, kneading, pounding, and pressing again through a noodle press. Each step depends on experience, with temperature and humidity shaping the final result. The finished noodles are smooth, slightly springy, and deeply fragrant.
In Guangxi, where many start the day with a bowl of rice noodles, which is more than a breakfast staple, it is a symbol of home. A local saying captures this devotion: "Better to go three days without rice than one day without noodles."
As an intangible cultural heritage, shengzha mifen preserves more than culinary technique. It also holds the memory of a community, craftsmanship, and the rhythms of a region where food and identity are inseparably linked.
