Roast duck — or Peking duck, as it's often known — has been served in Beijing for around 600 years. First served by palace chefs during the Ming Dynasty (1368-1644), it has a royal pedigree. It is often sliced at tableside and served alongside cucumbers and scallions. The components are wrapped in a thin flour pancake, which is slathered with any one of several savory sauces.
Quanjude, an iconic Peking roast duck restaurant established in 1864, has used a twist of innovation to stay relevant with young diners in recent years. Quanjude's new menu combines traditional and modern cuisine, making it more suited to young people.
