A celebration of Swiss fare
"It's really about bringing Swiss cuisine to China to showcase how diverse and creative Swiss cuisine can be," says Grob. "The taste is important and the seasons tell us what to cook."
According to Grob, even though the Kulm Hotel serves international food for tourists from all over the world, they also provide a Swiss buffet once a week to let customers taste authentic local cuisine. Grob has also brought some of the classic dishes to China on this trip.
"As you may know, Switzerland has the highest number of Michelin-starred restaurants per capita in the world, but there is no typical 'Swiss food'. Swiss cuisine is highly diversified and there are so many regional dishes which vary from one place to another," says Grob, who has been working in the kitchen for 45 years.
"The menu is a mix of different foods from regions all around Switzerland. When you eat a little bit of everything, it's like you are traveling around the country."
