Sweet roasted chestnuts: A timeless treat

Sweet roasted chestnuts, a beloved autumn treat in China, have a history dating back to the Song Dynasty (960-1279). In the Lingcheng district of Dezhou city, Master Liu has been perfecting the art of roasting chestnuts for over two decades. Sweet roasted chestnuts made by him are renowned for their sweet, soft and melt-in-the-mouth texture.
To ensure the highest quality, Liu carefully selects chestnuts with fine flesh, a low moisture content and uniform appearance.
The roasting process begins with preheating sand in a large pan. Chestnuts are then added and continuously stirred to ensure even cooking.
Every 20 minutes, sugar syrup is added twice to caramelize the chestnuts. The roasting continues until the chestnuts become soft and transparent sugar-coated forms, signaling that the chestnuts are perfectly cooked and ready to be enjoyed.
