Braised Fish and Bean Curd is made with fish such as groupers, bean curd, ginger, soy sauce, peanut oil, sweet potato flour and other seasonings.
First gut the fish, coat it with salt and fry in hot oil until it turns slightly golden. Shred the bean curd, braise with soy sauce for five minutes and then add the fried fish for another several minutes. Stir the sweet potato flour with water to make a sauce, pour onto the braised bean curd and fish and sprinkle with chopped scallion.
Feng Enyuan, secretary-general of the China Cuisine Association, said that this dish is "delicious and healthy".
