The Pingyao version can be used as medicine to strengthen the spleen, help the stomach, and provide vital energy.

It is a large, succulent plant, 2-7 cm in diameter, dark brown on the outside and yellowish-brown inside.

It is also a product of its environment, a famous specialty with a long history, with the yams of Yuebei being considered the highest quality.

A variety of long yam dishes can be found in Pingyao restaurants, for instance, hot candied ones, or honey or buckthorn, plain-fried, steamed, or grilled long yams. They have a sweet-waxy taste and are a good tonic.

Pingyao Wantuo

Wantuo, a type of noodle from the Qing Dynasty (1644-1911), is one of Pingyao's local snacks with a long history.
