Several chicken rice noodle shops stand near the Zhongyi Market outside the Old Town of Lijiang, the pleasant and delicious smell from the shops attracting many people to go in and have a bowl of chicken rice noodles.
The chicken rice noodles here are not delicate in form but boast the most primitive feel of Lijiang. They are very popular among local residents.
The most important materials for making chicken rice noodles are chicken soup and the flavorings. The soup must be cooked with the local chicken for at least four hours. The local chickens are not fed with forage. The long cooking process creates an excellent flavor.
Flavoring helps to improve the taste of the chicken rice noodle. Visitors can add different flavorings as they like, such as parsley, garlic and ginger.
The chicken rice noodles attract many people who pursue real pleasant flavors. For them, flavor is more important than form.
