Ding-sheng cakes, thick at two ends and thin in the middle, play an important role in moving homes, constructing homes and birthdays in Suzhou. Ding-sheng cakes taste good and bear an auspicious meaning in Chinese.

Tips: Ding-sheng cakes are dyed with natural yeast powder and made from unpolished rice.

Sugar cake

Sugar cakes were also introduced in the documentary A Bite of China, Season II. They have different cooking ingredients according to different seasons; therefore there are a variety of sugar cakes, for example, sugar cakes with melon seeds, roses, pine nuts, pumpkins and mint.

Tips: Touch the stewing cakes with chopsticks. If they are a little sticky, they are ready to take out of the oven. Cool down the cakes, chop them into rhombus shapes and serve.
