Signature dish: snails in soy with chilis

It's a new dish, but it already has high acclaim because, when the steaming snails appear on a plate before you, fairly begging to be eaten, there’s no hesitation. One delicious whiff, and the warmth spreads as you eat them leaving a lingering aftertaste.

The liquid is made from top Shaoxing wine and Cantonese rose liquor, then some dried chillies, mashed garlic and chilli sauce. After boiling the mixture for half an hour, the chili and wine aroma mixes with the snails, while the meat remains fresh and tender.

Other signature dishes use chicken, ducks, and fish heads, each of them complementing the rice and wine. If you have taste for mushrooms, give the elegantly thick and tender ones in a pot a try. They’re loved by all the customers, a dish that is savory, pleasant, and refreshing.
