Australian celebrity chef David Laris likes to keep things fresh.

As such he is constantly updating and tweaking his creations, marking them with his own sense of style. His latest works can be found at Three on the Bund's posh restaurant and bar Laris, which he co-founded in 2004.

Born in Greece, raised in Australia and traveling the world thereafter, Laris soon acquired a global palette that has clearly helped shore up his diverse new menu.

"It takes inspiration from all over the world, and it is steeped in traditional techniques with contemporary touches," said Laris.

At the same time, the 40-year-old likes to make sure his dishes capitalize on his signature style, characterized by an abundance of his favorite ingredients.

"I want to give it my own touch and twist, and I hope that's something that is recognized as my personal style," he said.

The man behind such popular Shanghai eateries as The Fat Olive, Martini Bar, Slice and, most recently, Barbie Caf on Huaihai Road M., said that patrons can expect the highest level of quality from his latest menu, which features a number of seasonal delicacies.

Oysters with red wine vinegar is a modest-tasting starter. With a light scent, this fruit of the sea is served up with a dash of red wine and vinegar for extra flavor.

Another seasonal option is the wild king fish. Lightly fried, to give its skin a crispy texture, it is dressed up in zesty sauce made from braised morels, pancetta and preserved lemon, and is a personal favorite of Laris'.

For those looking for something a little richer in taste, try the warm potatoes foam with foie gras and truffle. Wrapped in layers of warm, smooth gooey potatoes foam, it could benefit from a little less greasy foie gras but nonetheless remains a good option for those who aren't afraid of a little artery-clogging.

At the end of the meal, each table can be served with Laris' signature chocolate as a free treat. The famed Chocolate Room, where the best chocolate in Shanghai is churned out, also gets raves reviews from guests.

First-time visitors may want to check out the workshop on their way to the restrooms. The stunning chocolate fountain outflows milky chocolate that is used to make a nice collection of irresistible chocolate in different flavors. The Mahjong and Chinese chess-shaped pieces add a nice Asian touch.
