What does a squirrel-shaped fish taste like? Students and teachers from George School found out during a study trip to Suzhou, where they explored the city’s cuisine. From the unexpected texture of mushrooms in noodles to the striking presentation of sweet-and-sour squirrel-shaped fish, each dish offered something new to discover. The experience was about more than new flavors. It was a chance to learn about the ingredients, traditions and culinary artistry behind the flavors of Jiangnan and experience Chinese culture one bite at a time.
