Special dinner celebrates Yunnan's prized wild mushrooms

In August, a remote mountain village in Yunnan province became the setting for an extraordinary gastronomic collaboration, as Chef Tam's Seasons at Wynn Palace in Macao teamed up with the Songtsam boutique hotel group to present a "Four-Hands Dinner by Chef Tam Kwok Fung and Su Qisheng" in Cizhong village, Dechen county, Diqing Tibetan autonomous prefecture.

The menu was a celebration of the region's prized wild mushrooms, freshly foraged from the surrounding mountains. Chef Tam Kwok Fung personally joined local foragers to handpick matsutake and other seasonal fungi, which became the centerpiece of the evening's creations.

Signature dishes included slow-braised pork belly in its own juices with matsutake and handmade Cizhong rice cakes, as well as lotus leaf rice with Benzilan green-shell egg, termite mushrooms, and preserved meat. Each chef brought distinct culinary techniques to the table, enhancing and highlighting the natural umami and aroma of the mushrooms.

The feast was paired with an exclusive selection of Yunnan wines, among them two award-winning vintages from Yunnan — Zaxee Syrah 2022 and Zaxee Oak Barrel Reserve Chardonnay 2023 — both recipients of honors at the 2025 Wynn Signature Chinese Wine Awards.

The pairing underscored the growing recognition of Yunnan's emerging wine industry alongside its celebrated mountain produce.

This intimate event combined the artistry of two acclaimed chefs, the bounty of Yunnan's wilderness, and the elegance of fine wine, creating a memorable encounter between terroir and craftsmanship in one of China's most picturesque culinary landscapes.
