Loving eggs, the search for a perfect omelette

I have always loved eggs. Sunny side up mostly, but scrambled as well.

My favorite line in a sitcom was when the leading actor went around asking every member of the family, "How do you like your eggs?"

Sunny side up; over easy; steamed; and boiled were the replies. The actor ignored them all and chirped "scrambled it is" every time.

I will normally line up three eggs, whack them across the middle and start beating them in a small bowl. Sometimes, I will add a pinch of pepper for taste. Fish sauce too.

Just as a change of pace, I slice some Vietnamese sausage into tiny chunks and throw it in.

Preparing scrambled eggs is a little time-consuming, though, so I only do the work when I am in the mood to do so.

Another thing my family loves to do is to make hardboiled eggs by putting them in water and letting it bubble for 3 minutes exactly. We then put all the eggs in a cold pan so they can cool down.

We either eat them hot or leave them in the fridge to cool overnight so there is something to snack on at breakfast. Works that way for egg salad, too.

I normally look for organic eggs, relying on the guarantee they come from free-range chickens.

Some friends advised me not to eat so many eggs and just have two or, at most, three at breakfast.

I must confess I do not think I ever met an egg I did not like.

One website called eggs the perfect food.

The site said: One large egg has just 70 calories. A large egg has only 4.5 grams of fat, including 1.5 grams of saturated fat. A large egg represents 13 percent of the recommended daily allowance for protein consumption. Eggs are low in sodium, and they naturally provide key vitamins like B12 and D, along with iron, zinc and calcium.

In Beijing, I always look for the egg dishes every time we go out for a meal.

I have tried steamed eggs, where they are softly boiled and contain pieces of meat, shrimp and sometimes tofu. I used to get them once a week from a restaurant on the Sherpa app, but the eatery has, apparently, closed so I am looking for another source.

Another favorite is scrambled eggs with shrimp, scallions and a touch of garlic.

The shrimps are modest in size and incredibly fresh. You get them with a cup of steaming white rice and you have gustatory heaven. I order them at a Chinese restaurant in Kerry Center called Horizon and you almost need no other viand for lunch.

I think of eggs a lot, especially when I am stuck in my apartment these days. Before the almost daily nucleic acid tests, I literally loaded up by buying a carton of eggs for our household.

I figure there are going to be several days in the coming weeks when I will be mixing eggs and thinking "scrambled it is".
