Anhui cuisine festival opens in Beijing

To introduce authentic Anhui flavor to customers in Beijing, the Red Chamber of China World Summit Wing, working with Shangri-La Hotel in Hefei, has unveiled 17 specialties from Anhui cuisine available from June 7 to 20.

Anhui cuisine, one of the eight major Chinese cuisines, originated in ancient Huizhou (today's Jixi and Shexian in East China's Anhui province) during the Southern Song Dynasty (1127-1279). It has deep roots in local culture.

Extensively utilizing natural ingredients from sea and land, it employs cooking techniques such as frying and deep frying to retain their original flavor.

The cooking methods of Anhui cuisine are heavy on oil, color and heat.
