Fried river snails are frequently seen on the snack table during the Mid-autumn Festival in Guangdong, by owning the implication of "blessing". The Cantonese like to have river snail when appreciating the full moon because they believe it's good for eyes.

River snails are characterized by their thin shell and thick meat. They have high-protein and low fat. This dish, fragrant yet spicy and sweet, was invented in Shunde. The snails are typically fried with perilla leaves which eliminate their earthy flavor and accentuate the delicate taste. It is one of the favorite small dishes in Guangzhou.
