Rangpizi

As one of the special snacks of the Hui people in Northwest China, rangpizi is made with rice and looks like noodles, and can be delicious and refreshing. Rangpizi is made of salt and water, which is rinsed through cold water in order to separate the starch from gluten. Then, the mixture is dried to remove the water. Add soda and mix. Pour it in a dish made of metal with high thermal conductivity covered in oil. Put the dish into boiling water, then you can get stuffed leather. Before eat it, you can cut it into pieces and put some gluten on it with red chili oil and mature vinegar. It can also be mixed with bean jelly. The biggest feature of rangpizi is its bright and soft texture. It is a popular dish to eat it in the summer and fall.
