The conceptual split between the Collection’s third-floor dessert parlor, Sugar, and its nightclub, Cube, is dramatic. Whereas the former is designed to evoke a pastiche of girlhood daydreams, the latter exudes a decidedly more grown-up sensuality, bathed in tones of silver and smoky granite. While cocktails are served in both establishments, only Cube permits smoking -so we selected a couch and debated the extensive menu. Well, our efforts bore delicious fruit: specifically, apples. The apple strudel martini (RMB 80) was nothing short of inspired: the combination of muddled apples, liquor and liqueurs was in perfect balance and the drink tasted like it should be served by the slice. Indeed, we were so delighted that we abandoned our late-night plans (and what was left of our budget) to stay for a few more rounds. Cube |
