Jerome La Carrou, owner of the FCC, found his inspiration in his native France last summer, where Collette, a Parisian restaurant, features more than 100 different types of bottled water. La Carrou explains: "They have a concept of matching fine dining and mineral water together; it is absolutely fantastic. They are able to tell you which water to choose (they all have a different pH) according to the dish you are eating." FCC's Aqua Bar boasts more than 30 varieties of water, including bottles from England, Scotland, the United States, Italy, Norway, Serbia, France, Spain, Canada, Germany, Portugal, Sweden, the Netherlands and New Zealand. The concept of designer water may seem a bit decadent, but La Carrou is quick to point out that water is more than just what comes out of the tap. Clean, pure water is a health essential, improving your immune system, boosting your energy and sharpening concentration. Perhaps most tempting to Shanghai's fashionable set, proper hydration is essential to maintaining your complexion and fighting the visible signs of aging. If that's not enough, the Aqua Bar also offers oxygen-enriched water, which is claimed to improve circulation, digestion and memory, while easing tired muscles and polishing the skin. Ogo, the Dutch oxygen-enhanced water, is the beauty product du jour in Paris, London, New York, Sydney and perhaps now Shanghai. Ogo promises 35 per cent more oxygen than typical water, added with a patented process they deem "natural oxygenation".
